How to make Rotel Pinwheels
Makes 28 pinwheels
Prep time: 15 minutes
Chill time: 2 hours
Ingredients:
12 flour tortillas
8 ounces cream cheese, softened
1 10 ounce can diced tomatoes with green chilies (Rotel), drained
1 cup shredded Mexican blend cheese
2 green onions, finely chopped
Instructions:
Combine the cream cheese, tomatoes, shredded cheese, and green onions in a large bowl.
Place three flour tortillas in a row, making sure the edges are lined up and the ends are overlapping. Spread the mixture in an even layer over all the tortillas.
Starting at one end, roll up the tortillas into a large log.
Wrap in plastic wrap.
Continue rolling until you have four logs.
Place the tortillas in the refrigerator to chill for at least 2 hours.
