Ingredients
  

  • 20 baby yellow potatoes
  • 2 tablespoons olive oil
  • Salt and pepper
  • 1 cup sharp cheddar cheese
  • 1/2 cup real bacon bits or 4 strips cooked bacon finely chopped
  • Sour cream for serving optional
  • Chopped green onion for topping optional

Instructions
 

  • Preheat the air fryer to 400 degrees.Combine the baby potatoes, olive oil, salt and pepper in a bowl. Toss until all the potatoes are coated.

  • Arrange the potatoes in an even layer in your air fryer basket or tray and cook for 20 to 30 minutes, until tender.

  • When the potatoes are cooked through, remove them from the air fryer and slice each one in half.Use a small spoon or knife to scoop out the center of each potato. Set the filling aside to use another time.

  • Place a small amount of cheese inside each potato skin and top with bacon bits.Return the potatoes to the air fryer to cook at 350 degrees for 3 to 5 minutes, until the cheese is melted.
