Method
- Preheat the air fryer to 400 degrees.Combine the baby potatoes, olive oil, salt and pepper in a bowl. Toss until all the potatoes are coated.

- Arrange the potatoes in an even layer in your air fryer basket or tray and cook for 20 to 30 minutes, until tender.

- When the potatoes are cooked through, remove them from the air fryer and slice each one in half.Use a small spoon or knife to scoop out the center of each potato. Set the filling aside to use another time.

- Place a small amount of cheese inside each potato skin and top with bacon bits.Return the potatoes to the air fryer to cook at 350 degrees for 3 to 5 minutes, until the cheese is melted.

- Serve topped chopped green onion and sour cream for dipping.
