20 baby yellow potatoes
2 tablespoons olive oil
Salt and pepper
1 cup sharp cheddar cheese
1/2 cup real bacon bits or 4 strips cooked bacon, finely chopped
Sour cream for serving, optional
Chopped green onion for topping, optional
Instructions:
Preheat the air fryer to 400 degrees.
Combine the baby potatoes, olive oil, salt and pepper in a bowl. Toss until all the potatoes are coated.
Arrange the potatoes in an even layer in your air fryer basket or tray and cook for 20 to 30 minutes, until tender.
When the potatoes are cooked through, remove them from the air fryer and slice each one in half. Use a small spoon or knife to scoop out the center of each potato. Set the filling aside to use another time.
Place a small amount of cheese inside each potato skin and top with bacon bits.Return the potatoes to the air fryer to cook at 350 degrees for 3 to 5 minutes, until the cheese is melted.
Serve topped chopped green onion and sour cream for dipping.
